Gasaya leaves from Mirriah

During the rainy season in Niger, there are few vegetables on the market. Although there are plenty of onions, tomatoes, carrots and zucchinis are hard to come by, making it hard to cook for an entire household. Thankfully, however, nature’s pantry is full of food, including various tasty leafy vegetables such as gasaya, malahiya and tseido.


While I was making a vegetable soup with frozen vegetables, I added two main ingredients to enhance my dish: crush hanza to add proteins, taste and structure, plus a large portion of gasaya leaves (that taste just like spinach).


My mother always used to say that no dish is complete with “greens”, and during rainy season, the greens provided come straight from nature’s pantry!
